The knuckle is the part in front and outside of the thigh, starting from the "kiloto" and reaching just below the animal's knee. The well-known knuckle, an exquisite piece of meat, very tender. It is cooked in thin slices for grilling or frying, whole roll, without bone for the oven and in the juvette pot. It has a high content of collagen which also helps in binding sauces.
